If you're thinking about buying a quarter cow, the first question is almost always the same: how much meat do I actually get? It's the right question to ask. Buying beef in bulk is a real commitment, and you deserve to know exactly what's coming to your freezer before you spend a dollar.

Here at Whole Cow, we're a family raising cattle in Texas, and we talk with families like yours every week who are trying this for the first time. So let's walk through it together — honestly, with no fine print and no pressure.

The short answer

A quarter cow gives you roughly 100 to 130 pounds of finished, take-home meat.

That's the meat that actually lands in your freezer — vacuum-sealed, labeled, and ready to cook. It's enough to feed a family of four for around six to eight months, depending on how often you serve beef.

If you've seen bigger numbers quoted elsewhere (like 150 or 200 pounds), those are usually talking about a different weight — the “hanging weight” before the meat is trimmed and cut. We'll explain that difference below, because it's the single most misunderstood part of buying bulk beef, and we never want you to feel surprised.

What you actually get: the cut breakdown

A quarter isn't just a pile of one kind of meat. It's a balanced share of the whole animal — front and back — so you get real variety. Here's what a typical quarter cow looks like:

Marbled Black Angus New York strip steak on a butcher board from Whole Cow

Type of cut Roughly how much
Ground beef 35–50 lbs
Steaks (ribeye, sirloin, strip, and more) 12–20 steaks
Roasts (chuck, rump, sirloin tip) 3–5 roasts
Specialty cuts (short ribs, stew meat, brisket portion) A handful of packages
Soup and marrow bones Included on request

The exact mix depends on how you'd like it cut — and that's the best part of buying this way. You're not stuck with whatever the grocery store put on the shelf. You tell us how thick you like your steaks, how you want your ground beef packaged, and which specialty cuts you care about. We handle the rest.

How long will it last?

For most families, a quarter cow is a six-to-eight-month supply. Here's a simple way to think about it:

  • A family of four eating beef three or four nights a week: about 6 months.
  • A couple or smaller household: often a full year or more.
  • A big household or frequent grillers: you may want to look at a half instead.

If you're not sure which size fits, that's exactly what our quarter cow vs. half cow guide is for — and you can always start smaller with one of our sample boxes to see how your family likes the beef first.

How much freezer space do you need?

A quarter cow fits comfortably in a small chest freezer — about 4 to 5 cubic feet. For many families, that's a compact freezer you can tuck into a garage or utility room. You don't need a giant deep freeze for a quarter, which is part of why it's such a friendly first step into buying in bulk.

A quick word on “hanging weight” (so nothing surprises you)

This is where a lot of first-time buyers get confused, so we want to be straight with you.

When a butcher talks about a quarter, you'll sometimes hear a bigger number — say, 150 to 200 pounds. That's the hanging weight: the weight of the beef before the bones, excess fat, and trim are removed during cutting.

The take-home weight — the actual meat you put in your freezer — is typically about 60 to 65% of the hanging weight. That's why a quarter that “hangs” at 175 pounds becomes roughly 100 to 115 pounds of finished cuts.

Neither number is a trick — they just measure different stages. We'll always tell you the finished weight you can expect, confirm the details before anything is processed, and there are never surprise fees. That's a promise.

What does a quarter cow cost?

At Whole Cow, our quarter beef packages start at $1,300 for our Black Angus and $2,400 for our 100% Fullblood Wagyu. When you divide that across 100+ pounds of premium, ranch-raised beef — a mix of steaks, roasts, and ground beef — the per-pound value is hard to match at a grocery store, especially for this quality.

And because it comes straight from our family's ranch to your freezer, you know exactly where your beef came from and how it was raised. No middleman, no mystery.

Is a quarter cow right for you?

A quarter cow is a great fit if you:

  • Want to try buying beef in bulk without a huge freezer or a huge commitment
  • Have a smaller household, or a family of four that eats beef a few times a week
  • Care about knowing where your food comes from
  • Want restaurant-quality steaks and everyday ground beef, all custom-cut to your liking

If that sounds like your family, we'd be honored to fill your freezer.
