What is the difference between hanging weight and take-home weight?

Hanging weight refers to the weight of the animal carcass after initial harvest, but before it is carved down into individual retail cuts. Your final take-home freezer weight is typically around 60% to 65% of that initial hanging weight. This variance is entirely normal and represents the natural loss of bones, moisture, and excess fat trim during our intensive in-house custom butchering process.

How much freezer space will my order require?

As an expert rule of thumb, you should allocate 1 cubic foot of dedicated freezer space for every 35 lbs of packaged bulk meat.

  • Quarter Beef: Fits comfortably into a standard, clean refrigerator-freezer top slot (Requires roughly 7 to 8 cubic feet of space).
  • Half Beef (Side of Beef): Requires a dedicated small-to-medium chest freezer or deep freeze unit (Requires roughly 10 to 12 cubic feet of space).
  • Whole Beef: Requires a dedicated large chest freezer or an upright commercial deep freeze (Requires 20+ cubic feet of space).

How long will my bulk beef stay completely fresh?Because every single steak, roast, and pound of ground beef is professionally vacuum-sealed in heavy-duty commercial polymer wrap and immediately flash-frozen at peak freshness at our facility, your beef will easily maintain its elite flavor, color, and texture integrity for 12 to 24 months in your freezer.

What makes your 100% Fullblood Wagyu different from standard Wagyu?

Most American Wagyu sold online is crossbred (F1) beef, meaning Japanese genetics are mixed with domestic Angus cattle. Whole Cow's American Wagyu is strictly 100% Fullblood, bred entirely from a pure, uncrossed Japanese bloodline on our Texas ranch. This pure heritage yields an intricate, uniform snowflake-like intramuscular fat structure that delivers a legendary buttery texture that melts evenly during cooking.

What specific cuts are included in a Whole, Half, or Quarter cow order?

Your bulk beef order is structurally divided into the primary beef primal cuts. You will receive a premium breakdown across the Chuck (pot roasts, flat iron steaks), Rib (ribeye steaks, prime rib roasts), Loin (New York strips, filet mignon tenderloins, T-bones, top sirloin), Brisket (whole packer brisket), Round (rump roasts, stew meat, stir-fry strips), and Plate/Flank (skirt and flank steaks, premium ground beef). Every single cut is custom-tailored to your processing instructions.

Are your Black Angus and Fullblood Wagyu cattle grain-finished or grass-finished?

To achieve our signature, elite marbling profiles that consistently hit USDA Prime and luxury Wagyu grades, our cattle are raised on open Texas pastures and meticulously finished on a proprietary, premium vegetarian grain ration. This intentional finishing protocol develops the rich, intricate intramuscular fat structure (marbling) that delivers an incredibly tender, melt-in-your-mouth steak texture that grass-finished beef simply cannot replicate.

How does a customizable digital cut sheet work after I place my deposit?

Once your reservation deposit is securely processed, our family processing team will email or text you a link to our interactive digital cut sheet. This guide allows you to specify exactly how you want your carcass sectioned. You will choose your preferred steak thickness (e.g., 1.25" vs 1.5"), select bone-in vs. boneless cuts, determine roast weights, and decide how much of your trim is allocated to premium ground beef packages or specialty cuts like short ribs and oxtails.

Where do you ship, and do you offer local delivery?

We offer 100% free doorstep bulk delivery across the entire local Dallas-Fort Worth (DFW) metroplex using our own temperature-controlled vehicles. For our out-of-state customers, we seamlessly ship our premium bulk beef via secure frozen freight across the lower 48 states. (Please note we currently cannot ship to Alaska, Hawaii, or international destinations). [1]

What is your return and refund policy for bulk beef?

Due to the strictly perishable nature of our premium USDA Prime and Fullblood Wagyu beef, we cannot accept returns or issue refunds once an order has been custom processed and fulfilled. The only exception is if your shipment arrives fully thawed due to a direct carrier shipping transit error. However, we are a family-first business, and we understand that unique situations happen—if you experience any issues with your delivery, please reach out to our team immediately, and we will gladly work with you personally to find a fair and positive resolution.

When will my order ship, and what is your aging process?

To achieve maximum tenderness, deep flavor, and the highest possible beef quality, we age all of our carcasses for 14 to 21 days inside our climate-controlled facility. However, because Whole Cow owns and operates our own processing plant, we bypass commercial backlogs and are frequently able to pack and ship your order within 2 to 3 business days of completing its custom cut sheet. Our family will contact you personally to walk you through every step of your specific fulfillment timeline the moment your order is placed.
